– Pour the fruit juice and the Banyuls wine into a saucepan. Add the dried apricots cut into quarters, and cook them for 10 minutes.
– Add the washed and hulled cherries and cook them over a low heat for 10 minutes.
– Put them in the fridge.
– Serve chilled. This is delicious with a scoop of vanilla ice cream, or when served with a small shortbread biscuit.
