Ingredients

  • 400 g of cherries
  • 70 g of dried apricots
  • 25 cl of red fruit juice
  • 25 cl of Banyuls wine
  • 40 cl of vanilla ice cream

Preparation

– Pour the fruit juice and the Banyuls wine into a saucepan. Add the dried apricots cut into quarters, and cook them for 10 minutes.

– Add the washed and hulled cherries and cook them over a low heat for 10 minutes.

– Put them in the fridge.

– Serve chilled. This is delicious with a scoop of vanilla ice cream, or when served with a small shortbread biscuit.
