Ingredients

  • Apricot juice: ½ L
  • Egg whites: 2
  • Sugar: 20 g
  • Vanilla pod: 1

Preparation

  1. Separate the eggs.
  2. Whisk the egg whites until they form peaks and add the sugar ¾ of the way through.
  3. Cook the egg whites in the microwave, for 2 x 10 seconds.
  4. Slice the vanilla pod in 2 and add the seeds to the apricot juice.
  5. Serve on plates.
