Ingredients

  • Lamb shanks: 2 pieces
  • Onion: 1 piece
  • Carrots: 2 pieces
  • Garlic: 2 cloves
  • Thyme: For the record
  • Olive oil: 2 cl
  • Water: 10 cl
  • Dry white wine: 10 cl

Preparation

1.  Chop the aromatic garnish

2.  Sear the shank & cook it in an oven for 35 mins at 200°C

3.  Make the cooking liquor

4.  Reduce the juice to dry, deglaze the pan, pour in the liquor and reduce

5.  Strain the sauce through a sieve

6.  Arrange it on a plate
