Preheat your oven to 200-220ºC.
Chop the parsley and green onions.
Pull the leaves off the sprig of thyme.
Place the herb mixture inside the sea bass cavity.
Pour half of the coarse salt into the bottom of a dish.
Arrange the four sea bass pieces and cover completely with coarse salt.
Moisten the salt with some water.
Bake and cook for approx. 25 minutes.
This dish should be served straight from the oven.
Break the salt crust by using a small hammer.
Arrange in a serving dish with a few slices of lemon.
For example, you may accompany your sea bass with lamb’s lettuce and watercress with boiled potatoes and parsley butter.
